You can have a great meal with this tender corned beef, cabbage and potatoes without any fuss or mess. Many nights we just don’t have time for multiple pots and pans for side dishes and such.

Literally everything goes into the instant pot for dinner and you do not have to worry about spending extra time cooking other things.

Everything takes on the best flavor from being cooked with the beef. The carrots, potatoes and cabbage are so delicious!

Why do people eat corned beef and cabbage on St Patrick’s Day?

Corned beef isn’t actually typical Irish food but most immigrants were unable to afford the high cost of boiled bacon. So they cooked brisket instead which is a cheaper cut of meat.

They paired it with cabbage because of the low cost. The immigrants were homesick and wanted food that reminded them of their homeland.

Equipment Needed:

You will need an electric pressure cooker to make this Pressure Cooker Corned Beef and Cabbage recipe.

I am using an8 quart Instant pot but you can use a 6 quart.I personally have anInstant Potand so far I am loving it.

Ingredients Needed:

  • Corned Beef Brisket
  • Carrots, peeled and cut into large pieces
  • Yellow Potatoes – Leave them whole. You can also use red potatoes instead if you prefer.
  • Green Cabbage (See How to Cut Cabbage)
  • Butter
  • Minced Garlic
  • Chopped Parsley
  • Salt and Pepper
  • Grainy Mustard

Do you Rinse corned beef before cooking?

You don’t have to rinse the beef. This is not necessary for this recipe.

Point Cut or Flat Cut Corned Beef?

When you go to do your shopping, you will find that there are 2 different types of corned beef: point cut or flat cut.

Either types will work great for this recipe. However, I prefer the point cut as it’s generally more fattier which makes it more tender and more juicier in this crock pot recipe.

How to Make:

  • Put the corned beef brisket in the pressure cooker first. Make sure the fat side is up in the Instant Pot.
  • Next, toss the carrots and potatoes in the instant pot with the cold water and pickling spices packet that came with the corned beef.
  • This all cooks for about 90 minutes on high pressure. Then do a quick release to release the pressure from the Instant pot and then add the cabbage.
  • The cabbage only takes a few minutes to cook.
  • Once everything is ready, remove everything from the instant pot and slice the corned beef.
  • Mix up the butter, garlic and parsley and drizzle over the carrots, potatoes and cabbage.
  • Place everything on a platter and serve with mustard on the side. Yum!

You can omit the cabbage if you prefer although we love it! Even my non cabbage loving people love the cabbage in this recipe.

It takes on a really great flavor with the corned beef. However, you can certainly omit the cabbage if you prefer.

This Recipe is Easy to Make:

This recipe requires very little preparation. If you can toss things into the instant pot, you can make this meal.

Even when you are super busy, you can get dinner on the table fast with this recipe. Toss everything in the slow cooker and get dinner on the table fast.

You won’t be tempted to grab take out or eat out when you can make a meal that is so easy to fix.

Instant Pot Corned Beef Tips:

  • Make sure to follow the cooking times so you do not over cook the meat as it will become tough.
  • Make sure to cut against the grain when get you ready to slice the corned beef.
  • You do not want to add the cabbage initially or it will be very soggy. This does not get added until near the end of the cooking time.
  • It is optional to serve with grainy mustard but this really adds a level to this dish. I highly recommend it.
  • Some recipes call for bay leaves to be added to the instant pot. I have made it both ways and I don’t have a prefer. If you love bay leafs, then add 2 in and remove them after the cook time.
  • Put the vegetables on top of the beef so that they are not sitting in the cooking liquid which could cause them to get too soft.

Cooking the Vegetables:

Cooking the vegetables in the instant pot with the corned beef does make them soft in this recipe. Make sure to cut them into large pieces (leave the potatoes whole) before adding them to the instant pot.

If you prefer firmer vegetables, only add the vegetables to the pressure cooker for the last 15 minutes of the cook time.

How to Store:

Store the leftovers in an airtight container in the refrigerator for up to 5 days.

You can also freeze the leftovers in a freezer safe container or bag for up to 2-3 months. Be careful when reheating so that the potatoes do not get too soft.

Ingredients

  • 4 lbs corned beef brisket
  • 3 carrots peeled and cut into large chunks
  • 1 lb small yellow potatoes halved
  • 1/2 head green cabbage cut into wedges
  • 3 cups water
  • 4 tablespoons butter
  • 2 teaspoon minced garlic
  • 1 tablespoon chopped parsley
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • grainy mustard for serving optional

Instructions

  • Remove the corned beef from the package.

  • Place the corned beef brisket (fat side up), carrots and potatoes in a Instant pot. Add 3 cups of water to the Instant pot, plus the seasoning packet that comes in the corned beef package.

  • Cover and set the valve to sealing.

  • Cook on high pressure for 90 minutes.

  • Do a quick release to remove the pressure.

  • Remove the lid and Add the cabbage on top of the corned beef.

  • Add the lid back on and set the valve to sealing.

  • Set the pressure for 4 minutes. when finished do a quick release.

  • Remove the cabbage, corned beef, potatoes and carrots from the slow cooker. Slice the corned beef against the grain or shred.

  • Place the butter, garlic, parsley and salt and pepper in a small bowl. Microwave in 30 second increments or until melted.

  • Drizzle the garlic butter over the carrots, potatoes and cabbage. Place the meat, potatoes and vegetables on a platter and serve with mustard on the side if desired.
